Occidental Cooking

Overview
The Occidental Cooking course at CIS College introduces you to the foundations and techniques of Western cuisine over 24 hours of guided and hands-on instruction. You will start with kitchen safety and knife skills, move through stocks and classic sauces, and go on to prepare well known Western dishes such as chicken piccata, beef stroganoff, and roasted meat with vegetables, along with homemade pasta, salads, and Western desserts and pastries.
The course runs in a hybrid format, combining classroom sessions with practical cooking sessions at CIS branches across Lebanon, so you build real kitchen skills alongside the theory.
What You Will Learn
- Kitchen hygiene, food safety, and safe knife handling
- How to prepare stocks and classic sauces such as béchamel, hollandaise, and bolognaise
- Preparing Western main dishes including piccata, stroganoff, and roasted meats with vegetables
- Making homemade pasta and starch-based side dishes
- Preparing Western-style salads such as Caesar salad
- Baking and finishing Western desserts and pastries such as tarts, croissants, and cakes
- Reading recipes, measuring ingredients, and basic menu planning
