Oriental Sweets

Overview
The Oriental Sweets course at CIS College guides you through the preparation of traditional Lebanese and Middle Eastern sweets over 24 hours of guided and hands-on instruction. You will learn to work with knafeh dough, maamoul, baklava pastry, semolina-based sweets, and other well known regional specialties, building the dough, syrup, and decoration skills behind each one.
The course runs in a hybrid format, combining classroom sessions with practical preparation sessions at CIS branches across Lebanon, so you practice each recipe under guidance.
What You Will Learn
- Preparing knafeh dough and cheese-based sweets such as halawet el jeben
- Making the maamoul family, including maamoul aqras and maamoul mad bil ashta
- Working with baklava pastry and syrup-based sweets such as osmalieh and znoud el sett
- Preparing semolina and nut-based sweets such as mafrouka, namoura, and barazek
- Making date and butter-based cookies such as kaak bi tamr and ghraybeh
- Preparing qatayef and other seasonal Eastern sweets
- Making regional specialties such as coconut discs and aish el saraya
